2 lbs Top of the Mountain Ground beef
2 Onions, diced
1 Green pepper, diced or sub poblano pepper
1 Tbsp Jalapeno, finely chopped
1 Can (14 Ounce) Mexican-style tomatoes
2 Cans (8 Ounce) Tomato sauce
2 Tbsp Cumin
2 Tbsp Chili powder
1 Tsp Cayenne pepper
1/2 Tsp Cinnamon
1/2 Tsp Paprika (preferably smoked)
1 Can (14 Ounce) Kidney beans, drained and rinsed 13. 1 Can (14 Ounce) Black beans, drained and rinsed 14. 1 Cup Chicken stock
1 Head Cilantro finely chopped
Juice of 1 lime
12 Tbsp Brown sugar
- Brown Top of the Mountain ground beef with onions and peppers in a dutch oven.
- Drain excess liquid/fat and add tomatoes, seasoning and chicken stock, bring to a boil.
- Add beans, cover and simmer 1-2 hours.
- Add a 1/2 cup of chocolate chips, just before serving.
